It’s not easy finding a balance between fine and coastal dining, but Berardo’s succeeds with aplomb, deserving its place as the local standard setter. Perched on the first floor above the stir of Hastings Street, the stylish, subtropical, white dining room is accessed via a weathered boardwalk. Chef Shane Bailey is an advocate of keeping it local: he knows all the best local suppliers and combines that knowledge with skill to make their produce shine. Queensland figs are paired with a fragrant washed rind from Maleny, vincotto and rocket. Bendele Farm spatchcock comes with salty diced pancetta on a savoury risoni with corn kernels. Line-caught mahi mahi on a dill and lemon risotto is boosted by a slug of sweet vermouth. The wine list is extensive, and the service elegantly casual, encouraging you to linger over desserts such as dragon fruit consommé with yoghurt sorbet.
