Bistro Guillaume is probably as uncasino-like as it could be while still being housed in the same building as Crown. Its modus operandi is subtlety and restraint, both in the elegant dining room – all timber, marble and neutral tones – and in Guillaume Brahimi’s menu, which mixes French bistro classics (a wondrously silky chicken and duck liver parfait) with more modern dishes (just-spicy chilled tomato soup with yabbies and meticulously diced cucumber). There might be perfectly roasted chicken served simply with mushrooms and potatoes, or yellowfin tuna seared with chequerboard grill-stripes and teamed with eggplant and capsicum confit and Ortiz anchovies. Desserts, such as a delicate soup of berries, keep to the restrained luxury theme as does the perfectly pitched service. One jarring note is the heftily marked-up wine list, a reminder that you are, after all, in a casino.
