After building a reputation at Stokehouse, Il Bàcaro and Sydney’s Otto, Maurice Esposito is now master of his own domain: a light-filled corner restaurant with widely spaced tables, comfortable chairs and efficient staff. Seafood is the focus and sustainability is the mantra. Find assured contemporary dishes such as grilled John Dory fillets with black zebra tomatoes, zucchini flower and black olive purée, or baby snapper fillet and prosciutto-wrapped prawns with a saffron-scented salad of asparagus, broad beans and chervil. Challenging? There will always be (superb) beer-battered fish and chips, reimagined spaghetti marinara and even meat – roasted duck breast with confit leg served with orange and cinnamon sauce. Desserts such as hot date tart with spiced frangipane and vanilla bean ice-cream are satisfying and a wine list with a dash of Italian brio adds further class.
