Named for American illustrator Charles Dana Gibson, a Gibson is simply a Martini garnished with two pickled onions rather than with olives or a lemon twist. Today's cocktail glasses are often larger than those popular in decades past. Don't feel you need to fill them; the second of two smaller Martinis will be much more enjoyable than the tepid second half of a single large cocktail. Pictured with caviar with herb sandwiches.

- 60 ml gin
- 10 ml dry vermouth
- 2 pickled cocktail onions skewered on a toothpick

- 1Add gin and vermouth to a shaker or bar glass half-filled with ice. Stir well, strain into a chilled cocktail glass, garnish with pickled onions and serve without delay.
