Join Gourmet Traveller’s cheese expert Will Studd and wine man Max Allen at the Grand Hyatt Melbourne for the ultimate cheese and wine adventure, featuring top cheeses from around the globe.
Some of the world’s finest cheeses will be the star attractions at this month’s intimate tasting evening hosted by cheese expert Will Studd and wine connoisseur Max Allen at the Grant Hyatt Melbourne.

“I’ll be presenting internationally recognised benchmark cheeses, some of them quite rare,” says Studd. “There will be Austrian cheeses never before seen in Melbourne, including a fantastic raw-milk cheese.”

Naturally, guests will be treated to premium drops chosen by GT wine writer Max Allen to complement each cheese.

“We’ll be comparing a 60-day-aged Taleggio with a 120-day-aged Taleggio, the same cheese at different ages,” says Studd, who’s also looking forward to presenting a highly coveted new-season Roquefort, up against an extra-soft spoonable Gorgonzola.


Executive chef Jason Camillo has designed a menu of substantial cheese dishes to supplement the cheese tastings, including a four-cheese risotto dramatically presented in a wheel of parmesan. “Everything will be prepared in front of the diners in the open kitchen,” says chef Camillo. “It’ll be an amazing evening of interaction.”

This open kitchen is at the very heart of the residence, the Grant Hyatt’s exclusive event space, modelled on a private mansion. We look forward to welcoming you.
