This airy dining room enjoys spectacular views through ancient melaleucas out to the Coral Sea. The vibe is relaxed, with banquettes to loll about on and curtains billowing in the breeze. Expect clever dishes of impeccable ingredients and a winsome choice of wines and cocktails all delivered by professional wait-staff. Chef Nick Holloway takes advantage of the local bounty, as with, for example, the millionaire’s salad of shaved palm heart, melon, lime, chilli and baby herbs. Try coconut candy – chunks of toffeed coconut flesh to chew with coffee alongside house-made passionfruit marshmallow. Attention to detail is paramount – chips are hand-cut, steamed then deep-fried and served with house-blend vinegar. This meticulousness follows through in everything from a simple chilli burger at lunch to rainforest honey and cardamom duck for dinner. One of the state’s best.
