Shaun Arantz, formerly of Mayfield’s The School House, must have graduated with honours judging by his new Racine Restaurant at La Colline vineyard. The elevated setting overlooking a valley of vines is pure Europa, and the cooking, too, brings global gloss to Arantz’s regional pantry. In a sleek dining room painted in a groovy green, every dish has been thought through, perfected, and presented with originality. It is evident in a magic scallop and celery lasagne with salmon roe, potato velouté and squid ink pasta; in twice-cooked pork belly with curried Dauphinois potatoes, crushed broad beans, apple purée and pork consommé; and in an orange panna cotta with poached fig, ginger compote and orange biscotti. The wine list is local and international and wait-staff give the all-too-rare impression that they’re there to help you enjoy the meal. You will.
