The combination of Sarti’s bustling split-level room, central bar, outdoor terrace and service that unfailingly maintains its cool under pressure creates an exciting experience even before Riccardo Momesso’s vibrantly flavoured food begins to land. Inventive but respectful interpretations of both Italian classics and Momesso’s family recipes drive a menu that starts with an extensive list of stuzzichini – spicy peppers stuffed with baccalà, house-made capocollo served with crunchy dried broad beans – before moving through a list of house-made pasta, perhaps spaghetti tossed with crab and clams, and meaty mains of veal scaloppine topped with black truffles and buffalo mozzarella. A pistachio panna cotta dessert with salted caramel popcorn matches the theme nicely. Noise levels can be challenging but the pay-off is a room that buzzes with energy and enthusiasm.
