Witness the elegant minimalism of char-grilled barramundi served with lemon and a scatter of capers – add a side of rosemary roast potatoes for total bliss. Tony Sassi is renowned for his skill with seafood and the just-shucked oysters with finger lime and chilli dipping sauce are hard to pass up; polpette of red emperor is an equally smooth start – velvety rounds of smoked fish crumbed and topped with tartare, salmon caviar and dill.
