Ingredients
- 80 ml olive oil (1/3 cup)
- 3 garlic cloves, thinly sliced
- 450 gm yellow beans, trimmed
- 3 golden shallots, thinly sliced
- 2 tbsp lemon juice
- 1½ tsp finely chopped thyme
- ½ tsp dried chilli flakes
- 2 cups (loosely packed) baby rocket
Method
Main
- 1Heat oil and garlic in a large frying pan over medium heat until garlic is fragrant (1 minute). Add beans and shallot, stir frequently until lightly browned (4-5 minutes). Stir in lemon juice, thyme, chilli and 1½ tsp salt, cook until beans are just tender (3-5 minutes). Stir in rocket until just wilted (1 minute), then serve hot or at room temperature.
