There’s no doubt TV personality, environmentalist and celebrity cook Stefano de Pieri single-handedly put Mildura on the culinary map. Testament to that is his restaurant beneath the Mildura Grand Hotel in a discreet space that once housed the cellar. Dinner is a relaxed and fabulously unfussy five-course affair, a dégustation celebrating all things local and seasonal. Start the feast with ocean trout cooked in a salt-crusted casing, which keeps the fish succulent, followed by Murray cod in an intensely flavoured chicken broth with asparagus spears. There’s likely to be home-made pasta, perhaps spaghettini with sweet yabbies and roast tomato and basil sauce, and roast lamb sliced thickly and served with its rosemary-infused jus alongside baby green beans and zucchini. End with a filo pastry tart filled with pastry cream and fresh figs and a glass of wine from the Italian-focused list.
