The bar for Brisbane dining lifted when Buffalo opened. With a dégustation fielding between nine and 21 courses, this is a magical mystery marathon designed for those who want to luxuriate in cutting-edge cuisine and are prepared to pay for the pleasure. Attention to detail is paramount, from the plating (specially designed cutlery and dishes accompany each course) to the service, which is exemplary. Abandon yourself to the sommelier: Ryan Squires’s dishes are breathtaking but the menu is not intuitive and you’ll need guidance. There are thrills in each course, from foie gras served with limoncello jam, toasted marshmallow, tamari and almonds to a whimsical cheese dish – goat’s curd, wild rice, peppered strawberry and fig. Those who like to watch can book the chef’s table overlooking the open kitchen. Others will be content to focus on the alchemy on the plate.
