It’s a 40-minute drive from Perth to chef Alain Fabrègues’s veteran fine diner. Far better, then, to book one of the new cottages across the garden and make a right old night of it. Set-price dining is the go here, with two dégustation menus (one vegetarian) on offer. In fact, the Box is one of the state’s best fine-dining options for vegetarians, and during winter a truffle-themed set-pricer is offered. Fabrègues’s style is always evolving and moving with the times. Delicate coconut and prawn broth offers overtones of kaffir lime, while salmon gravlax comes with a hint of ginger. Fear not, traditionalists. Scallops on ratatouille and Narrogin lamb roasted with garlic, served with a rosemary-scented Madeira sauce, marks a return to France. Desserts are wonderful, if kitsch, notably the hive of honey and truffle bavarois served in an almond tuile with meringue bees.
