The entire experience at this bistro within Palazzo Versace is as impressive as the setting. Linger over sunset cocktails at Vie’s marble bar while neon lights shimmer on the Broadwater. Chef Peter Dufty lets produce take centrestage: ceviche of sliced kingfish and nori-wrapped seared tuna with shaved cucumber wakame epitomise culinary minimalism. It’s not just about the raw and the sliced, however. Gutsy flavours are presented in a roast fillet of beef with wild mushrooms, barbecued onions and cabernet jus, while angelhair pasta with prawns, tomato, verjuice, saffron and capers is full of garlicky goodness. On the dessert front, the jury is still out on whether lemon meringue pie and Belgian chocolate ice-cream is a great combination. Vie’s wine selection is broad, drawing from Old and New Worlds, and there’s plenty to tempt in the under-$100 bracket.
