Vue de Monde is not just about eating; it’s about enjoying an exhilarating, theatrical experience, with an army of chefs in a stage-like kitchen, squads of perfectly presented floor staff, food that bubbles, melts, smokes and foams, and a long wine list that cherry-picks benchmark labels. It doesn’t come cheap, nor should it, with the quality of ingredients and the level of skill on display. The dégustation-only menu consists of a minimum of five courses, though there are plenty of “bonus” dishes – perhaps a clear tomato consommé amuse-bouche, or a box of handmade chocolates as you leave. There is a whiff of gimmickry – a foie gras cigar served in an ashtray – but more often the food is whimsical, such as a John Dory fillet crusted with crisp potato scales; or playful, as in a dessert of cassis sago with bubblegum ice-cream. Unashamedly rarefied and truly unique.
