Aperol Spritz

We like ours with a splash of yuzushu.

In our Aperol Spritz, we like to add Franciacorta, a drier, more Champagne-like sparkling wine from Lombardy – it makes a refreshing alternative to prosecco. And while it sounds a bit recherché, a dash of yuzushu, a blend of sake and fresh yuzu juice, gives a Spritz a twist that’s hard to pin down. (Kudos to Sydney wine bar 10 William St for the inspiration.)

Ingredients

Method

1.Pour Aperol into a large wine glass or tumbler half-filled with ice. Top with Franciacorta or prosecco, soda water to taste, and a dash of yuzushu. Garnish with lemon wheels and green olives and serve with two straws.
