It’s hard to pin down what exactly a slice is. It’s not quite a pastry nor a biscuit, though a backbone of either adds definition to the creation at hand. Soft fillings – vanilla custard, say, as in a vanilla slice recipe – may be a top order, though an easy slice with the crunch of nuts is just as welcome. And not all slices require time in the oven – some need only the chill of a refrigerator to set. At worst, a slice is a sweet, oblong item that transcends definition; at best, it’s a layered dessert of limitless textures and fillings that keeps us coming back for more.
